Ingredients: Dry rub: 1 tbsp each of: cinnamon powder garlic powder onion powder black pepper dried thyme
1/2 tbsp rosemary 4 tbsp brown sugar
BBQ Sauce: 1/2 cup ketchup 2 tbsp dijon mustard 2 tbsp malted vinegar 2 tbsp brown sugar 1/2 onion finely diced 3 cloves garlic finely minced
Directions: Preheat one side of BBQ to 250 F / 120 C. Mix dry rub ingredients in bowl. Pat dry rub over ribs making sure the meat side is coated liberally. Place ribs bone side down on the non-heated side of the BBQ. Close the lid and cook for approximately 2 1/2-3 hours over non-direct heat. (It took me 4 hours for them to fully cook.)
To make the BBQ Sauce: Sweat onions and garlic in pan, cook until onions are translucent, about 1-2 minutes. Add remaining ingredients. Cook 5-7 minutes until sauce becomes thick. In last 5 minutes of the rib cooking, brush with sauce. Remove from heat, and let rest for 5 mins. Serve with beer!
